Moroccan chickpeas (pg. 189 HealthyGirl cookbook) 1 tbsp olive oil 1 cup diced yellow onion 3 cloves garlic, minced Âœ tsp ground cumin Âœ tsp ground cinnamon 1 tsp paprika Âœ tsp coriander ÂŒ tsp ginger Âœ tsp salt ÂŒ tsp pepper 1 (14 oz) can diced tomatoes Âœ cup diced dried apricots 2 (15 oz) cans chickpeas, rinsed and drained 3 tbsp tomato paste Ÿ cup veggie broth How to: 1. Heat a large pan to medium heat. 2. Once heated, add the olive oil, onion, and garlic. SautĂ© for a few minutes until golden. 3. Add the spices and sautĂ© for another minute. 4.
