HEALTHY CARROT CAKE 🥕 If you’ve been looking for the perfect carrot cake recipe then look no further than this!! It uses wheat-free flours including coconut & almond, and the banana gives it a beautiful natural sweetness! Oh and who doesn’t love a cream cheese frosting… recipe below 👇🏼
Ingredients:
1 very overripe large banana, mashed
1/4 cup coconut oil, melted
1/4 cup maple syrup
2 eggs
1 tsp vanilla
1 tsp baking soda
2 tsp ground cinnamon
1/2 tsp nutmeg
1/2 cup almond milk
2-3 carrots, finely grated (about 1 & 1/4 cups)
2/3 cup rolled oats
1 cup almond meal
1/2 cup coconut flour
Pinch of salt
Cream cheese frosting:
80g light cream cheese
1-2 tbsp honey
2 tbsp lemon juice
Method:
1. Add the banana, coconut oil, maple syrup, eggs, and vanilla to a bowl and mix well.
2. Stir through your all remaining ingredients and mix well.
3. Pour into lined loaf tin and bake in the oven for 50-65 minutes on 180°C or until golden and a skewer comes out clean.
4. Allow to cool completely.
5. Make your cream cheese frosting by whisking the ingredients together.
6. Pour over carrot cake once it’s cooked.
7. Slice up and enjoy!

1 3/4 cups quinoa puffs
1/3 cup peanut butter
1 block dark chocolate (I used 70%)
3 tbsp coconut oil
1/4 cup maple syrup
Pinch of salt
Method:
1. Melt your chocolate in the microwave or in a saucepan with 1 tbsp coconut oil.
2. Add in your peanut butter and whisk well until smooth.
3. In a separate bowl, add your quinoa puffs. Pour in the chocolate mixture and stir well.
4. Top with salt & pour into a lined loaf tin & flatten.
5. Pop into freezer for 2 hours.
6. Cut into bars and enjoy! Store in freezer.

1/4 cup coconut sugar
1 tsp baking soda
2 tsp cinnamon
Salt
1 apple, thinly sliced
WET:
2 eggs
1/2 cup greek yoghurt
1/4 cup maple syrup
1 tsp vanilla
1/4 cup almond milk
1 tbsp olive oil
Method:
1. Add dry ingredients to a bowl (except apple) and mix well.
2. In a separate bowl, whisk together wet ingredients.
3. Mix wet to dry.
4. Pour into a lined cake tin & top with your sliced apple.
5. Bake in the oven for 45 mins on 180°C.
Note: You could sub the Greek yoghurt for apple sauce, just do less maple syrup as it’s quite sweet.

Ingredients
FILLING:
3/4 of a 400ml coconut milk tin
300g dark chocolate (I use 85% Lindt)
BASE:
2.5 cups almond meal
1/2 cup cacao powder
1/3 cup maple syrup
3 tbsp melted coconut oil
Method:
1. Heat coconut milk in a saucepan until smooth. Add in chocolate until melted and it becomes a thick consistency. Set aside.
2. In a bowl, whisk ‘base’ ingredients together. Pour into lined tart tin and press down and around the tin well with your fingers.
3. Pour chocolate filling on top of base and evenly spread.
4. Sprinkle with salt and set in fridge for a few hours/overnight!

Ingredients:
Dry:
2 cups almond meal
1 tsp baking soda
1/4 cup shredded coconut
Zest of 1 lemon
Wet:
1/2 cup lemon juice (about 2 lemons juiced)
3 eggs, beaten
1 tbsp melted coconut oil
1/4 cup maple syrup
1 tsp vanilla essence
Optional honey lemon glaze:
2 tbsp honey
1 tbsp lemon juice
1 tsp lemon zest
Method:
1. Mix together dry ingredients in a bowl.
2. In a separate bowl, whisk together wet ingredients.
3. Add wet to dry & stir well.
4. Pour into a lined loaf tin & spread out evenly with a spatula.
5. Bake in the oven for 30-35 mins on 180°C. (I baked mine for 40 mins and it was slightly over cooked).
6. Make your honey lemon glaze in a small bowl.
7. Allow the loaf to cool slightly, then pour your honey lemon glaze over the top.
8. Top with some extra coconut, cut into slices and enjoy!
