Save these YOGURT MARINATED MEDITERRANEAN TOFU KEBOBS (plant-based dinner!)๐Ÿ˜‹โœจ#siggispartner

Yogurt marinade:
1/2 cup @siggisdairy plant-based
1 tbsp olive oil
1 tbsp lemon juice
spice mix: 1/2 tsp paprika, 1/2 tsp cumin, 1 tsp oregano, 1/2 tsp garlic, 1 tsp salt + pepper to taste

Other Ingredients:
1 block extra firm tofu cut into cubes
1 red bell pepper cut into cubes
1 yellow bell pepper
1/2 red onion cut into square pieces

Siggiโ€™s yogurt has the best plant based coconut blend I have ever tried, itโ€™s a staple. Itโ€™s so thick and creamy but it also has 11 grams of protein per serving. You have to try this yogurt hack, use it on any protein before cooking (tofu works so well)!

- Vegan sour cream homemade or store bought

I had a baby 4 months ago. I am so proud of what my body has done (I mean growing a human is pretty incredible!!). My body has changed a lot too! From stretched out skin, stretch marks, to a c-section scar, I donโ€™t think my body will ever look the same. Iโ€™m coming to terms with that โค๏ธhowever, I want to be strong and healthy for my kids and I want to feel confident in my body! Iโ€™ve been lifting weights and walking a lot which has felt so good. Im trying to rebuild the core strength I lost during my pregnancy and itโ€™s a journey. I feel like weight loss really has become this taboo topic that people are afraid to talk about in the wellness space. You CAN lose weight in a healthy balanced way without fad diets or restricting yourself. This is one of my favorite dinners lately for my weight loss journey, itโ€™s yummy, keeps me full, itโ€™s high in protein but balanced out with carbs and fats too. If youโ€™re on a weight loss journey too, love yourself first, be patient, donโ€™t expect to lose the weight all at once it takes TIME. Love u guys!! ๐Ÿฅน๐Ÿซถ๐Ÿผ

You need:
1 box barilla protein penne
1 cup sliced mushrooms
1 diced bell pepper
2 cups chopped spinach
1 jar marinated artichokes
1/2 diced onion
Protein of choice I used daring vegan chicken
dairy free Parmesan

Boil pasta, make chicken, cut and sautรฉ veggies, strain pasta and combine everything! Add the marinated artichokes and Parmesan! Season with salt and pepper to taste!
