i’m so tempted to get into fall recipes but not quite yet 😅 use up the last of your zucchini for this easy & healthy dinner! air fryer meatballs with herby lemon garlic zoodles RECIPE (gluten free, dairy free): for the meatballs: **makes 16-18** -1 lb ground beef (i used 90% lean, ground turkey of similar leanness should work too) -1 egg -1/4 cup diced yellow onion -1/4 cup chopped parsley -1/3 packed cup almond flour -3 cloves garlic, minced -1 tsp dried oregano -1 tsp salt -1/4 tsp pepper for the zoodles: -3 medium zucchinis, spiralized -1/4 cup chopped parsley -2 tbsp vegan butter (normal butter or ghee works too) -juice of 1 small lemon -3 cloves garlic, minced -red pepper flakes to taste -salt + pepper to taste add all meatball ingredients to a large bowl and mix until incorporated but try not to overmix. set aside in the fridge for 10-15 minutes. then, form into heaping 2 tablespoon sized balls. place on an air fryer tray and air fry at 400F for 10 minutes (should work in the oven too but time may vary). meanwhile, if you want to get rid of some of the extra moisture from the zucchini noodles…season it heavily with salt and then let it sit on a paper-towel lined plate for about 10 minutes. then, preheat a large pan to medium heat. once hot, add butter and let it melt. then add garlic and stir constantly for 30-60 seconds. add in lemon juice. then, add in zuccchini & parsley. stir. season with salt, pepper & red pepper flakes. let cook for 3-4 minutes until tender. add in the cooked meatballs & enjoy! #zoodlespagetti #zoodles #zucchinirecipes #airfryerrecipes #meatballs #healthydinnerideas #glutenfreedairyfree #lowcarbrecipes #lemongarlic #weeknightdinner
