Check out the recipe below- I had alot it extra date mix so I coated it in carrots and they were AMAZING!! Great recipe if you have a sweet tooth but want to eat veggies like me.

“Churro” Chickpeas

1 15 oz can chickpeas, drained or 3 cups carrots, peeled and cut
1 cup pitted dates
1 cup hot water
1 Tbsp cinnamon (Ceylon)
Sprinkle salt & extra sugar or natural sugar substitute if you eanted.
Preheat oven to 425°. Line a baking sheet with parchment paper and spray with oil.

Blend the dates, water and cinnamon. Coat with chickpeas (or carrots). Place on a baking sheet and cook for 25-35 minutes, until hardened and slightly crunchy. Air fryer for 15 minutes also works.
