To make the tofu: add 1/4 c nutritional yeast to 1 tsp garlic powder, 1 tsp onion powder, 1 tsp paprika, 1 tsp salt , 1 tsp cumin and/oregano. Mix it well and coat slices of extra firm tofu on all sides with the mix. Cook each one in a pan coated with olive or avocado spray and enjoy with a stir fry of your favorite veggies and soyaki marinade. Its the best and so inexpensive and easy to make.

2- 16 oz bags caulirice
3 tbsp Extra Virgin Olive Oil
1/4 cup Lemon Juice, 2 large juicy lemons
About a tbsp Salt
About 1 tap Pepper
1/4 cup chopped Mint
1/4 cup chopped Parsely
1/2-1 cup sliced cherry Tomatoes
1/4 Red Onion, chopped
Pour cauliflower rice into a large bowl, add everything else and toss in 1 large bowl. Stir and enjoy!

“Churro” Chickpeas
1 15 oz can chickpeas, drained or 3 cups carrots, peeled and cut
1 cup pitted dates
1 cup hot water
1 Tbsp cinnamon (Ceylon)
Sprinkle salt & extra sugar or natural sugar substitute if you eanted.
Preheat oven to 425°. Line a baking sheet with parchment paper and spray with oil.
Blend the dates, water and cinnamon. Coat with chickpeas (or carrots). Place on a baking sheet and cook for 25-35 minutes, until hardened and slightly crunchy. Air fryer for 15 minutes also works.

I’m using olive oil spray on the parchment paper AND on the the onion rings so they’re all coated and super crispy 😋
1 large onion
3/4 cup high fiber cereal, blended
Dash garlic powder, onion powder, & salt
2 large eggs
Onion Rings Caption:
Directions
Preheat the oven to 400 degrees. Spray baking sheet with nonstick spray.
Slice off onion's ends and remove the outer layer. Cut into 1/2-inch-wide slices, and separate into rings.
In a blender or food processor, grind cereal into crumbs. Season to your liking. Transfer to a wide bowl and mix in seasonings.
Place egg in another wide bowl. Coat your rings in the egg substitute, shake to remove excess, and coat with crumbs.
Evenly lay rings on the baking sheets.
Bake for 10 minutes. Flip rings. Continue to bake until outside is crispy and inside is soft, 20 - 25 minutes. Yum!

I doubled the recipe because its so good and my whole family loves it.
Cauliflower (& Potato) Mash
1 head cauliflower
4-6 small potatoes, you can use more or less depending on your preference
1/4 cup butter or plant based alternative, divided
2 tsp salt
2 tsp garlic powder
2 tsp fresh cut parsley for garnish
Boil cauliflower and potatoes together in a large pot until fork tender, may take 12-15 minutes or longer.
Once cooled, add the cauliflower and potato to the food processor with half the butter and 1 tsp salt, and blend until smooth. Taste the mix and add the additional salt, butter and garlic to your taste and preference.
I found that the potato and cauliflower blended up so smooth, I didnt need as much butter as I thought I did.
