The green sauce is fresh, vibrant and so delicious I could drink it. I used chicken quarters because I prefer dark meat, but you can substitute all wings, breasts or roast a whole bird. We served it with a very simple garden salad, but it goes great with roasted sweet potato, rice, sautéed vegetables, or fried plantains.
