Leek & potato 🤝 Crispy smashed new pots and lemony mustard leeks make a perfect pair. 2 medium leeks, sliced and washed A few sprigs thyme, picked 2 cloves garlic, finely sliced 1 lemon 500g new potatoes, washed 2 tsp wholegrain mustard Olive oil Salt & pepper 1. Place the potatoes in a large pan of cold salted water. Bring to a simmer, cook until tender, then drain. Leave the steam to billow off slightly in the colander for 5 mins or so 2. Meanwhile heat the oven to 190c. Place the potatoes well spaced on a lined or non stick tray. Crush the potatoes very gently with a potato masher. Drizzle generously with oil and roast until golden and crispy - about 25 mins 3. Meanwhile sweat the leeks in a little oil over a medium heat, stirring occasionally until soft. Add the garlic and thyme and cook for another 5 mins. Season to taste, add the mustard, dill, lemon zest and juice to taste 4.
