This HONEY - LIME chicken is the perfect weeknight dinner to add to your rotation🍋‍🟩🍯 Ingredients: 1 chicken breast thinly sliced Seasoned with: Paprika Chili powder Salt & pepper 1 lime juiced 2 tbsp honey For the Cucumber & Avocado Salad: 1/2 cucumber quartered 1 avocado cubed 1/2 red onion sliced 1 tosp honey Salt & pepper to taste 1 lime juiced Minced cilantro For the sides I made white rice and added 1/2 cup to my plate and approximately 1 cup of shredded lettuce. This dinner was SO good I can't wait for you to give it a try 🙌🏼 Notes: slice chicken breast. Season the chicken. On a medium pan on (medium heat) add 1/2 tbsp avocado oil then add chicken once the pan is very hot. Cook for about 3-4 minutes until no longer pink. Turn heat down then add lime juice and honey. Allow for it to simmer for another 3-4 min or until sauce turns thick in texture. For the salad cut the veggies add all into a bowl and mix well. MY FAVORITE SALAD EVER ! 🫶🏻 this recipe was based off a basic recipe i got from @giadadelaurentiis but i added my own twist! SO good! 👌🏻 Heat oven to 425. Chop 3 heads broccoli into very small pieces. Place on parchment lined baking sheet. Add 20oz shredded Brussel sprouts to sheet. Drizzle with 2 tbsp olive oil and 1 tsp salt, toss, and bake for 20 minutes, tossing half way through. Let cool. While baking, chop 8 pitted medjool dates and 1 cup salted almonds into small pieces. Set aside. Cook 2lb raw, peeled, tail off shrimp by heating a pan over medium heat. Add 1 tbsp butter and 1 tsp Calabrian chili paste. Add shrimp and a pinch of salt. Cook two minutes per side and turn off heat. Set aside. Make dressing by whisking together 1/2 cup olive oil, 2 tsp Calabrian chili paste, 2 tsp lemon zest, juice of 1 lemon, 2 tbsp honey, 1 tsp salt. Set aside. Assemble salad by putting roasted veggies in bowl, then add shrimp, dates, almonds, and grate fresh pecorino Romano on top. Drizzle dressing evenly over salads. Let’s work together 🤍 Ingredients: * 2 slices sourdough * 1 slice cheese of choice * 3 slices turkey or chicken breast (1.5-2 servings) * A handful of greens * 1 tbsp mustard * 1 tbsp yogurt * Sea salt * 1/4-1/2 Avocado is delicious on this but I was out * Olive oil spray * Optional: other sandwich toppings you love Any combo of easy veggies on the side: - Sauerkraut - Olives - Tomatoes - Carrots - Cucumbers - Peppers - etc. Instructions: 1. Spray two slices of bread with olive oil spray. Season both sids with sea salt. Place olive oil side down on a pan. 2. Top one slice with cheese, turkey, greens and the other with mustard, yogurt, and more sea salt. 3. Toast over the stove until the bread is lightly browned. Close the sandwich and continue cooking on low/medium heat until the cheese is melted 4. While the sandwich is toasting, prepare veggies on the side. 5. Plate and enjoy! A simple, healthy dinner that the whole family will enjoy 🍽️ Potato wedges: - slice 2 potatoes into wedges - toss in 1/2 tbsp olive oil and 1 tsp salt - air fry at 375F for 22 minutes, shaking a few times between Grilled chicken: - slice a chicken breast in half lengthwise - add to a bowl with 2 tsp olive oil, 1/2 tbsp lemon juice, 1/2 tsp garlic powder, 1/4 salt and a pinch of black pepper - grill for 5-7 mins per side until cooked through Lemon herb tahini dip: - mix together 1/2 cup plain greek yogurt, 2 tbsp tahini, 1 tbsp lemon juice, 1 tsp dried dill, 1 tsp garlic powder, and a pinch of salt Simple side salad: - add 3 cups spinach, 1/4 of a sliced red onion, 2 tbsp crumbled feta to a bowl - toss with 1 tbsp olive oil, 2 tbsp balsamic vinegar, 1/4 tsp salt and 1/4 tsp red pepper flakes This recipe makes about 2 servings.
