How to make Udon Stir Fry Noodle! It’s basically an end of the week dump meal of all the veggies I have leftover in my refrigerator. The ingredients are 3 package of udon noodles, 2 tbsp of avocado oil, 1 small sliced onion, 1 cup julienne carrots, 1 cup sliced shiitake mushrooms, 3 cups cut up napa cabbage, 2 tbsp minced garlic, 2 tbsp sesame oil, 1 1/2 tbsp soy sauce, 1 1/2 tbsp dark soy sauce, 1 tbsp brown sugar, 1 tsp black pepper and 1 oz sliced green onions. Start by simmering the packaged udon noodles in hot water for 2-3 minutes for the noodles to separate and immediately drain and rinse under cold water. In a large pan heat avocado oil to medium heat and add onions, carrots and shiitake mushrooms. Cook for 2-3 minutes and toss in napa cabbage and garlic. Cook for another 2-3 minutes before adding udon noodles, sesame oil, soy sauces, oyster sauce, brown sugar and green onions. Cook for another 2-3 minutes and serve with a drizzle of chili oil. #stirfrynoodles #udonnoodles #stirfry

Actually Quick Meals ep 2: My Go-to Udon 🍜 okay but why are udon noodles so good 😭🙏 Here’s the recipe: 1/2 tbsp soy sauce 1 tbsp oyster sauce (I used a vegetarian one) 1/2 tsp maple syrup or sugar 1 tsp dark soy sauce 1 tsp cornstarch 1/3 cup cold water 1/2 tbsp olive oil or neutral cooking oil 1/4 350g block extra firm tofu 2 garlic cloves, minced 2 green onions, whites and greens separated, finely sliced 1 tsp sesame oil 1 serving cooked udon (250g - I like the frozen kind, they’re chewier!) 1. Make the sauce: in a small bowl, stir together soy sauce, oyster sauce, maple syrup/sugar, dark soy sauce, cornstarch and water. 2. Heat oil in a small skillet over medium heat. Crumble your tofu directly into the pan and fry for 3-5 minutes until golden brown, stirring frequently. Add green onion and garlic and fry for another 2 minutes of so. 3. Give the sauce another quick mix, then pour it over the crumbled tofu and stir with a spatula. Let it come to a gentle simmer and bubble for about 2-3 minutes. It should thicken nicely. 4. Pour the sauce over a bowl of cooked udon and top with sesame oil and the greens of your green onion. Peanut Gochujang Udon 🍜 The quickest and most flavourful meal ever with so few dishes because we make the sauce and serve the noodles in the same bowl. Here’s the recipe: (serves 1) 1 serving udon, I prefer the fresh frozen kind because the noodles are chewier 1.5 tbsps smooth peanut butter 1 tbsp gochujang paste 1 tsp soy sauce 1/2 tsp rice vinegar 2-3 tbsps hot water (use cooking water if using frozen udon) 1 tsp toasted sesame oil green onion green, thinly sliced toasted sesame seeds 1. In your serving bowl, combine peanut butter, gochujang, soy sauce and rice vinegar. 2. Cook udon according to package directions, and at the end of the cooking time, reserve some of the cooking water if using frozen noodles. (I don’t do this if using the shel-stable udon because it’s coated in this weird film that seeps into the cooking water, so if that’s what you’re using then just boil water separately and use that) 3. Add hot water to sauce ingredients and whisk until smooth. Then add the udon and sesame oil, stir to coat the noodles and top with green onion and toasted sesame seeds. Prepare all of your veggies: onions, carrots, mushrooms and garlic (if you don’t already have it minced) 2. Mix all of your ingredients listed under SAUCE and set aside 3. Cook your bricks of udon noodle according to package. Rinse and drain under cold water. Drizzle with olive/ sesame oil to prevent sticking 4. Time to cook: heat up oil and cook shrimp, remove snd set aside 5. Next cook ur veggies: heat up some oil and sauté garlic til fragrant. Once fragrant add, mushrooms and cook for 1 minute. Then add carrots, onions, salt and black pepper to taste. Cook for 3-5 mins and remove from heat 6. Next add udon noodle and combine with shrimp. Then add veggies and combine. Add SAUCE and combine. Once all of your ingredients are in, cook for 3-5 mins. 7. Now add your noodles into your veggies and give it a little mix. Add shrimp and SAUCE, combine well.
