Sweet Soy Sauce Recipe: Ingredients: 5 grams of black cardamon (or Tsao-ko ) 2 grams of bay leaves 2 grams of star anise 2 grams of dry ginger 3 grams of cinnamon stick 50 grams of green onion 1 big thumb fresh ginger 6 grams of fennel seeds 400 grams of brown sugar 1. Add 1,500 grams of water to the pot. 2. Add the soaked spices ,ginger and onion. 3. Bring to a boil, then simmer on low heat for half an hour. 4. After half an hour, add 600 grams of light soy sauce and 400 grams of chopped brown sugar. 5. Stir the bottom of the pot to avoid the brown sugar sticking. 6. Boil for an hour to remove the light soy sauce flavor and enhance the layered taste. 7. Turn off the heat, remove any scum, and your sweet soy sauce is ready. Feel free to decrease the amount of seasoning, (especially the cayenne if you don’t like spicy 😅). 👉🏽Mix the chicken with the seasoning. Heat up a pan with the olive oil until the oil is rippling hot. Place the pieces of chicken one at a time to sear. Sear each side of chicken until golden brown, about 3 to 5 minutes on each side. 👉🏽Remove from the pan.
