Soy Milk Ingredients * 16 oz dried soy beans * 14 cups water * Sugar to taste Instructions 1. Rinse and cover soy beans with water making sure the water covers 2 inches over the beans. Let the soybeans soak in the water overnight. 2. Drain the soy beans and blend it with 14 cups of water until very smooth. Make sure to do this process in batches if you do not have a huge blender. 3. Strain the soy beans using a cheesecloth and discard the mashed up soy beans. 4. Heat the soy milk on medium heat making sure to stir often to prevent the bottom from burning. 5. Once the soy milk reaches 210 degrees Fahrenheit, let it simmer for an additional 15-20 minutes. If the soy milk is bitter, let it simmer longer. 6. Strain the soy milk one more time and add sugar to taste. I like adding in around 1/3 to 1/2 cup of sugar. 7.
