This step ensures the pan gets extremely hot, creating a perfect searing surface for the sprouts. Prepare the Brussels Sprouts: Wash the Brussels sprouts thoroughly, then pat them dry. This is important to ensure they roast rather than steam. Slice them in half to expose more surface area for a better roast. Seasoning: Toss the halved Brussels sprouts in a bowl with olive oil to coat them well. Add the minced garlic, salt, pepper, smoked paprika, and garlic granules, mixing to distribute the flavors evenly. Roasting: Carefully remove the hot cookie sheet from the oven and lightly grease it with olive oil. Arrange the Brussels sprouts on the sheet, cut side down, for a direct sear. This will provide a beautifully caramelized and crispy exterior. Roast in the oven for about 15 minutes, then check for a good char. Flip them over and roast for another 10 minutes to achieve a similar char on the other side. Final Touches: After roasting, remove the sprouts from the oven. Cheesy, creamy mashed potatoes topped with garlic parmesan potato gratin - this truly is the ultimate side dish! The inspiration behind this recipe is credited to the awesome Chef John. Hope you love it 😄 Chris x MASHED POTATO GRATIN | Serves 6-8 INGREDIENTS ➡️MASH: 1.5kg / 3.3lb Baking Potatoes 1 tbsp + 1 tsp Salt, or to taste 6 tbsp / 90g Butter, leave at room temp 160ml / 2/3 cup Cream, leave at room temp 150g / 1 1/2 cups Cheddar, grated 1/4 tsp Black Pepper, or to taste ➡️GRATIN: 750g / 1.6lb Baking Potatoes 2 tbsp / 30g Butter 1 large clove of Garlic, finely grated/minced 1/4 - 1/2 tsp Salt, or to taste 1/8 - 1/4 tsp Black Pepper, or to taste 40g / 1.4oz Parmesan (preferably fresh dusty variety) finely diced Fresh Chives, to garnish METHOD 1️⃣For the mash, peel and dice the potatoes into chunks, then place them in a large pot of cold water. Stir in 1 tbsp salt and turn the heat to high. Bring to a boil, then cook the potatoes until knife tender (but not so soft they're falling apart). Drain in a colander and leave for 1 minute.
2️⃣Immediately add the butter and cream to the pot and stir to melt the butter. The residual heat from the pot should be able to do this, but if not just momentarily turn on the heat to help things along. Add the drained potatoes and mash until smooth. Mash in the cheese then season with salt and pepper (I typically end up with 1 tsp salt and 1/4 tsp pepper, but work to taste). Spoon into a 25cm x 17cm / 10" x 6.5" baking dish (or similar size) and level off with a spoon. Preheat the oven to 200C/400F.
3️⃣For the gratin, peel the potatoes and slice them in half lengthways. Place each piece flat side down and very thinly slice into half moons (around 1/8"). Place the butter in a large mixing bowl and melt in the microwave. Whisk in the garlic, salt and pepper, then toss in the sliced potato. Finally, toss in half of the parmesan until well coated.
4️⃣Layer the slices cut-side-down on top of the mashed potato in 3 rows and at a slight angle (see video for reference). Cover with foil and bake for 20 minutes. Remove the foil, sprinkle over the rest of the parmesan and bake again for 40 minutes. The top should be deep golden and crisp, with the potatoes knife tender. 5️⃣Leave to rest for 15-20 minutes to allow the mash to retain its and shape and for the sliced potatoes to finish cooking on top (it'll stay piping hot - promise). Garnish with chives, then tuck in and enjoy!

Seasoned with garlic, smoked paprika, and black pepper, topped with Parmesan, and finished with a drizzle of balsamic glaze. Crispy, flavorful, and so delicious! Ingredients: - 8 cups bite-size broccoli florets (about 1 pound) - 2 tbsp olive oil - 2 tbsp melted butter - 3 garlic cloves, minced - 1 tsp salt - ½ tsp ground black pepper - ½ tsp smoked paprika - ½ tsp garlic granules - ½ cup shredded Parmesan cheese - Balsamic glaze, for drizzling Directions: 1. Position oven rack 6 inches from broiler. Preheat broiler to high. 2. Steam or boil broccoli. For steaming bring a few inches of water to a boil in a large pot fitted with a steamer basket. Steam broccoli until just tender, about 3-4 minutes. 3. Spread broccoli on a large lined baking sheet. Using the bottom of a Mason jar, sturdy glass, or potato masher to flatten each floret. In a small bowl, mix together the olive oil, butter, minced garlic, salt, black pepper, smoked paprika, and garlic granules. Drizzle this mixture over the broccoli, ensuring each piece is well-coated. 4. Evenly distribute the shredded Parmesan over the florets, about 1 tsp on each. 5. Broil until the broccoli is crispy, lightly browned, and the cheese has melted, 3 to 4 minutes. Make sure to keep an eye on it. 6. Drizzle with balsamic glaze before serving. Optional you can make a sauce but its not needed: Garlic Aioli Sauce: - 1/2 cup mayonnaise - 2 tbsp olive oil - Juice of 1 lemon - 1 tbsp of Garlic of Eden Seasoning @Floraandmana - 2 garlic cloves, minced - 1/2 tsp salt ( to taste ) Tip: Balsamic glaze is balsamic vinegar that’s cooked until it’s very thick.
