I wonder what rice dish is next 👀 - 3 cups long grain rice - 4 cups water (use finger method) - 2 cups fried kidney beans - 1/4 cup scallions - 1 tablespoon minced ginger - 8 cloves crushed garlic - 5 sprigs thyme - 1 can coconut milk - 2 tablespoons creamed coconut or butter - 1 scotch bonnet pepper (optional) - 5 allspice berries - 2 teaspoons salt (or to taste) - 2 teaspoons chicken bouillon - 2 teaspoons garlic powder -bay leaf Instructions: 1. Soak beans overnight. 2. In a large pot, combine soaked beans and 4 cups of water. 3. Bring to a boil until water evaporates and beans are soft stirring occasionally 4. Add coconut milk, creamed coconut or butter, scallions, ginger, and garlic to the pot with the beans. Simmer for 20 minutes. 5. Rinse the rice and add it to the pot. 6. Add enough water to reach the first line of your finger when placed on top of the rice. 7. Bring to medium heat, stir well, cover the pot, and reduce the heat. 8.
