Morning tea time wuth Lucy! 🍵 Today she’s enjoying a beautiful red tea from Taiwan, brewed Gong Fu style. The practice of Gong Fu is very different from Western brewing, in which we use smaller teapots with lots of leaves and less water, with very short steeps, to allow for multiple brews. Cheers to many more rounds on this beautiful Sunday. Steps below! Step 1: Add enough tea leaves to cover the bottom of the teapot. Step 2: Add a tiny bit of water to just cover the leaves. For this Red Tea we are using ~205F water. Step 3: After a few seconds, pour out the water into the share cup, and then into the teacups, then discard. This step is known as pre-seasoning, in which we are warming and seasoning our vessels, and also awakening the tea leaves. We are using a Gong Fu tray to discard water, if you’re interested in brewing Gong Fu I highly recommend purchasing one! They are easy to find online :) Step 4: Add more ~205F water to the teapot. Steep for 5-10 seconds. Step 5: Pour into the share cup and then into the teacups. Step 6: Enjoy! Repeat steps 4-5 for ~5 more rounds, if tea is still producing feel free to keep going!
