#duet with @beeya® Purple sweet potatoes recipe - Longevity Some of the longest living people in the world (centenarians) in Japan were found to have eaten a diet rich in purple sweet potatoes (among other common themes found in the Mediterranean diet). So what’s the science behind it? In short, they’re high in: -Anthocyanins (strong antioxidants that lower inflammation and cancer risk) -Vitamin A and C (also antioxidants) -Complex carbohydrates that provide sustained energy for longer periods -Fiber (helps control blood sugar leading to lower diabetes risk, lowers cholesterol and cancer risk, and more!) -And they’re also low in fat and sodium Recipe Serves: 6 wraps/tortillas. Prep time: 20 mins 1 cup mashed cooked sweet potato (purple or regular) ½ cup cassava flour 1 Tbsp melted grass fed butter, ghee, or coconut oil (consider margarine here instead! -Dr. Tim) 1 ¼ tsp sea salt Steps: 1. Cook sweet potatoes: Bake at 400F for 40-60 mins or boil until tender (save a bit of the cooking liquid for later steps in that case). 2. Mash: Use an electric mixer, fine mesh strainer, or potato ricer for smoothness. 3. Mix: Combine all ingredients, then knead until smooth. If the dough feels too dry, add a splash of water (use reserved cooking water if boiled). Dough should be hydrated but not sticky, add more flour if needed. 4. Divide: Roll dough into 6 balls. 5. Heat skillet: on medium heat, non-toxic nonstick or a well seasoned cast iron works best. Grease with coconut oil if needed. 6. Roll: Between parchment paper to about 1/8-inch thickness. Remove one paper, transfer tortilla to warm pan, dough side down. Cook for 1 minute. Remove second paper, carefully flip and cook for another minute.
