Pineapple Upside Down Cheesecake! 🍍🍒😋 Recipe below! TOPPING Cooking spray 4 tbsp. butter 1/2 c. packed brown sugar 1 (20-oz.) can pineapple rings in juice (drained, save the juice!) Stemless maraschino cherries FOR THE CAKE 1 box yellow cake mix 1/3 c. vegetable oil 1 c. pineapple juice (use drained juice from pineapple slices) 3 large eggs FOR THE CHEESECAKE 3 (8-oz.) blocks cream cheese, softened 1 c. granulated sugar 3 large eggs 1/4 c. sour cream 2 tsp. pure vanilla extract 1/2 tsp. kosher salt Directions 1. Spray 10in springform pan and 10in cake pan with cooking spray. Preheat oven to 350 degrees. Melt butter, sprinkle brown sugar over butter. Add pineapple slices and cherries to the bottom of the pan. 2. Mix yellow cake mix according to box directions, sub water for pineapple juice. Pour batter over sugar and pineapples and bake as directed. 3. While cakes are baking, beat soft cream cheese and sugar together. Add eggs one at a time then remaining cheesecake ingredients. 4. Once pineapple upside down cake is cooled, pour Cheesecake batter over in the springform pan. Save the other 10in cake for later. Bake Cheesecake for 1 hour, center should be slightly jiggly. 4. Let cheesecake cool completely, place in fridge overnight for 8 hours minimum. Remove cheesecake from springform pan and top with 10in pineapple upside down cake.
