Roasted Murasaki sweet potatoes Have you seen purple potatoes before? They’re called Murasaki sweet potatoes (also known as Japanese sweet potatoes). They’re slightly more starchy than a white potato but still sweet. My husband and I fight over these because they’re sooo good! Ingredients: 3 Murasaki sweet potatoes (you can find them at Trader Joe’s and some local grocery stores) 1 tbs avocado oil, or oil spray 1 tsp cinnamon 1/2 tsp sea salt Directions: 1. Preheat oven to 425°F. Wash and scrub the sweet potatoes with water. Leave the skins on! 2. Slice into 1 inch rounds and place on a baking sheet in a single layer. Spray or drizzle the avocado oil over the potatoes. 3. Sprinkle the cinnamon and salt evenly. Place in the oven for 20 minutes or until fully tender. 4. Eat right away or store in the fridge for a yummy snack.
