Aglio e olio aka an Italian “midnight snack” ✨🍉 Who’s seen the movie Chef? IYKYK INGREDIENTS 1lb cook spaghetti, al dente 1/3 cup olive oil (I used @Graza sizzle) 1 head garlic, thinly sliced Red pepper, to taste 1.5 cups reserved pasta water (you won’t need it all but just in case) 1/4 cup fresh parsley, finely chopped Lemon juice, to taste Parmesan cheese, to taste STEPS 1. Start by bringing a pot of heavily salted water to a boil. Add in your pasta and cook until al dente. Reserve 1.5 cups pasta water and drain. 2. *Right when you add your pasta to the boiling water, start on the sauce* In a large saucepan heat your oil over low heat. Add in your garlic and sauté for a couple minutes, stirring frequently. Be careful to not let it burn. Add in your red pepper and toast for another minute. 3. Add in a ladle of pasta water followed by a pinch of salt. Simmer few a few minutes, stirring occasionally to emulsify the sauce.
4. Once your pasta is al dente, add it directly into the pot. Add in your parsley and parmesan. Stir until everything is combined. You may need to continue adding more pasta water until the sauce is silky and sticks to the pasta. 4.
