Super moist lemon cake recipe using my new gadget Ingredients: Zest of 2 unwaxed lemons 180g caster sugar 3 eggs Juice of 1 lemon 115ml sunflower oil 2 tbsp lemon extract 175g natural yoghurt 200g self raising flour 1/3 tsp baking soda Pinch of salt For the lemon drizzle 60ml lemon juice 40g icing sugar For decorating 200g raspberries 300ml double cream, whipped Blueberries Blackberries Mint leaves Lemon wedges Lemon zest 1. Preheat the oven to 160c fan. Line 2 baking tins with parchment paper. In a bowl mix the lemon zest and sugar for 2 minutes. Add sugar and whisk on high for 2 minutes. 2. Add the lemon juice, lemon extract, oil and yoghurt and stir until combined. 3. Next mix the flour with baking powder and salt and sift it in. Fold the batter until combined. 4. Pour in the baking tins and bake for 30 minutes until cooked. 5. Meanwhile make the lemon drizzle by heating the ingredients for 2 minutes. 6. Leave the cake to cool before dabbing the cakes with the juice. 7. Now spread the whipped cream on the first layer, decorate with raspberries. Add the other layer of cake and spread more whipped cream. 8. Garnish with the fruits and herbs.
