FALLING IN LOVE WITH SALAD SERIES RECIPE 17/20 JENNIFER ANISTON SALAD So it turns out Jennifer didn’t have this every day on the set of friends 😂😂. But it absolutely delicious. Serves 4 Ingredients: 2 cups of cooked grain (I used burghul/cracked wheat) - you can also use quinoa, pearly barley, brown rice or freekeh 400g can chickpeas, drained and rinsed 2 cucumbers, diced 1 small red onion, diced 1/2 cup dried cranberries, roughly chopped 1/2 cup parsley, chopped 1/2 cup mint, chopped 1/4 cup chopped almonds, toasted (or any nut) 1/2 cup crumbled feta Dressing: 1/4 cup olive oil 1 lemon, juice squeezed 1 tablespoon honey 2 teaspoons tahini Sea salt & pepper Method: 1. Cook your desired grain as per packet instruction. Remove, drain, run through cold water and let cool. 2. For the salad: mix all ingredients in a large bowl. Season well. 3. For the dressing: combine all ingredients. Season and adjust to taste. 4.
