One pot high iron coconut lentil noodle stew Serves 4 Ingredients: 1 c red Lentils, soaked for 3+ hours or overnight 1 tsp sesame oil 1.5 tbsp vegetable oil 1 onion, sliced 2-3 cloves of garlic, minced 1-2 tbsp ginger, grated or finely chopped .5 capsicum/bell pepper, sliced 1 block of tofu, cubed 1.5 tsp fish sauce or soy sauce 1 can coconut milk 950ml veggie broth 50ml veggie broth + 1 tbsp miso paste 1 carrot, ribbons or sliced 1 broccoli, chopped 1 bunch bok choi/pak choi, chopped 220 g noodles (not dry) Instructions: 1. Soak the lentils for 3 hours to overnight with a generous amount of water 2. Fry the onions until softened, then add the garlic and ginger and cook until fragrant in a large pot or dutch oven 3. Chop the stem off the broccoli and finely dice the stem, then add them to the pan and set aside the broccoli florets, these will be added later 4. Add the tofu, capsicum/pepper, broccoli stems 5. Add the (coconut milk, fish sauce/soy sauce, veggie broth) ingredients then simmer for 40-50 mins on medium-low heat, or until the lentils are cooked. Make sure to check on the pot and stir occasionally, add more broth or water if required 6. Add the broccoli and cook for 5 mins until bright green 7.
