Sambar is a South Indian vegetable-lentil stew (for lack of a better description 😅) - you can turn up the heat or make it milder according to your taste. Served as is or with rice, idli, dosa … however you wish. This is definitely one of those recipes where quantities are difficult to estimate so I’m sharing the guideline amounts on the sambar masala box. 1/2 cup dry toor dhal (soak and boil until completely softened) 500g vegetables, chopped 1/2 tsp Kashmiri chilli powder (add according to taste) 1/2 tsp turmeric powder 1 tsp salt 3 Tbsp Sambar powder 3-5 Tbsp Tamarind (soaked and strained) To temper: 2 Tbsp ghee/oil 1 tsp mustard seeds 1 tsp fenugreek seeds 2-3 dried red chillies 5-6 fresh curry leaves Fresh coriander to garnish.
