the enoki is back & shes better x #enoki #mushrooms #vegan #foodtok #fyp ingredients 2 packs enoki, sliced into chunks enough unsweetened plant milk to dredge the mushrooms 2/3 cup potato starch 2-4 tbsp plain flour 1/2 tsp bicarbonate of soda 2/3 cup ketchup 1/2 cup gochujang 1/2 cup agave (or maple syrup) 1/4 cup rice vinegar 4 garlic cloves, minced sesame seeds for topping spring onion for topping method 1. add the enoki to a bowl with just enough milk to dredge them then set aside while you make the sauce 2. for the sauce: sauté the garlic in a saucepan until fragrant then stir in the ketchup, gochujang, agave & rice vinegar. bring to a simmer, cook until syrupy then remove from the heat & let it cool 3. drain the enoki then sprinkle with the plain flour & toss to coat. add the potato starch, bicarbonate of soda & salt to taste then toss until everything is coated evenly 4. deep fry for 6-8 minutes until golden & crisp then transfer to kitchen paper to drain any excess oil 5. add to a bowl, pour over the sauce, mix until thoroughly coated then serve topped with sesame seeds & spring onion
