Lemon juice (2 Lemons) In a large pot bring milk to a boil over medium-high heat. Once boiling stir in lemon juice, turn off heat and continue to stir for 1 minute. Cover and let cool/curdle for 15 minutes. After cooling strain the whey from the cheese, rinse the curds w/cold water, then strain the water from cheese. Add cheese curds to a food processor and blend til smooth about 3 minutes. Add whey to your cheese if it seems a bit dry or grainy. Transfer smooth cream cheese to an airtight container and chill in the fridge for 1 hour before using. Save the whey in fridge for recipes like pancakes, muffins, breads just substitute the whey when a recipe calls for water. Store in the fridge for a week 😁
