MARRY ME CHICKEN For three portions: For the chicken: - 6 Chicken Thigh fillets - 1tbsp paprika, onion powder, garlic powder, Italian seasoning - Salt & pepper For the sauce: - 1 tbsp olive oil - 75g diced sun-dried tomatoes - 150ml chicken stock - 100ml low fat cream - 60g Parmesan - 4-5 crushed garlic cloves - 1tsp oregano, onion powder, garlic powder - salt & pepper - Pinch of chilli flakes Add your chicken to a bowl & mix with the seasonings Add some oil to a large oven proof pan/ skillet. Add your chicken and sear for 5 mins each side, then set the chicken to one side. Spray the pan with some more oil, then add your garlic, oregano, and chilli flakes. Fry off for a minute or so, then stir in the chicken stock, creme fraiche, tomatoes and Parmesan. Bring sauce to a simmer, add back in the chicken thighs.
