Berkshire Pork Chop Tonkatsu Berkshire pork chops Fresh shokupan 3 eggs whisked with 1 Tbsp water AP flour Avocado oil for frying Short grain rice Green Cabbage Lemon wedges for garnish Katsu sauce (Detailed recipe coming soon) Black Sesame seeds for garnish -Dry off pork chops well, vacuum seal. Cook sous vide at 130f for 6 hours. -Cook rice following rice cooker instructions -Thinly shave green cabbage and soak in ice water at least 1 hour to crisp up -Slice lemons into wedges -Once pork has cooked, remove from bag and dry off well. 3 step heading process as seen in video. -Heat oil to 350, fry pork chop until golden brown all over. Remove and place onto paper towels to drain. Season with salt. -Slice and plate as seen in video. Enjoy.
