My fennel detox and anti-inflammatory salad ✨ I don’t know if this recipe exists already, but I made it recently and ooof… it’s become a house staple. Ingredients: • 1 fennel bulb • 1-2 endives • 1 pear • can of hearts of palm • 1 cup of strained and cooked beans • 1/2 cup of toasted nuts of any kind • 1 bunch of chopped parsley • dressing: 1 full lemon, 3tbsp olive oil, salt, pepper, 1.5 tbsp Dijon mustard, drizzle of apple cider vinegar (truly, all measurements should be to you liking) Method: I use a mandolin to very thinly slice the fennel, endive, and pear. I chop the rest of the ingredients by hand, then cook the beans to reduce any digestive upset. Toasting the nuts on a warm pan always adds incredible flavor.
