Recipe: Serves 2 Tzatziki spread: 1/4 cup Mayo 1/3 cup Greek yogurt 2 cloves garlic, grated 1 tbsp chopped dill 1 tbsp chopped parsley 2 mint leaves, finely chopped 1 tsp lemon juice 1/4 tsp salt 1 tbsp olive oil Black pepper to taste For Wrap: 1⁄2 bag Alexia® Sweet Potato fries 8-ounce boneless skinless chicken breast, butterflied to make two pieces Chili powder Adobo Salt and pepper 1 tbsp avocado oil ~6 large iceberg lettuce leaves A few handfuls broccoli sprouts 1 1⁄2 cup chopped kale leaves, massaged with lemon juice and olive oil 1⁄2 a cucumber, thinly sliced 1 avocado, sliced To begin, add all the ingredients needed for the tzatziki sauce to a bowl and stir to combine. Transfer to the fridge until ready to use. Pat your chicken dry and season with chili powder, adobo and salt and pepper. Heat a large skillet over medium-high heat. Add the avocado oil and nestle the chicken pieces into the pan. Sear the chicken for about 3-4 minutes per side until cooked through. Transfer chicken to a cutting board to rest. Cook the fries according to instructions. Slice the chicken and assemble the wraps. Lay 3 pieces of lettuce on a large piece of parchment or wax paper. Spread a couple tablespoons of the tzatziki spread in the middle of the lettuce leaves followed by the broccoli sprouts, kale, few pieces of onions and cucumber slices, chicken pieces, 1⁄2 the avocado, and more sprouts. I like to drizzle a little olive oil on top and finish with salt and cracked black pepper. Use the parchment or wax paper as a guide and tuck and roll the lettuce up, as tightly as you can, starting at the end closest to you. Once completely rolled up, cut the wrap in half and enjoy immediately. Serve any extra spread on the side to use as a dip.
