Day 1 | 30 days of 30 minute dinners 😋 Welcome to my new series! I can’t wait to start sharing some easy, quick and DELICIOUS dinners you’ll make time and time again. We’re starting off strong with these heavenly skewers 🤤 Enjoy! Chris x GARLIC PARMESAN CHICKEN SKEWERS | Serves 4 INGREDIENTS ➡️CHICKEN: 640g / 1.4lb boneless skinless Chicken Thighs 1 tbsp Olive Oil 1 tsp Paprika 3/4 tsp EACH: Garlic Powder, Salt 1/2 tsp Black Pepper 1/4 tsp EACH: Onion Powder, Cayenne Pepper (reduce if you really don't like spice - it's very subtle though) ➡️BUTTER: 75g / 5 tbsp Unsalted Butter, softened 20g / 1/4 cup freshly grated Parmesan 3 cloves of Garlic, finely grated/minced 1 tbsp very finely diced Fresh Parsley 1/4 tsp EACH Salt, Black Pepper, or to taste METHOD 1️⃣Slice the chicken thighs into bite-sized pieces then combine in a bowl with the oil and seasoning. Thread onto 4x 20cm/8” skewers, ensuring you leave a gap at both ends. Make sure the pieces are nice and compact so they stay nice and juicy. Place in the air fryer and cook at 200C/400F for 10 minutes. 2️⃣Meanwhile, combine the butter with parmesan, garlic, parsley, salt and pepper. You want the butter to be soft enough to brush, but not completely melted. A little creamy if you will. Pop in the microwave for 5 second blasts until you reach this consistency. 3️⃣After 10 minutes, flip the skewers (I find this easiest with a pair of tongs) and brush with 1/3 of the butter. Air fry for 2 minutes and 30 seconds, then flip them and brush with another 1/3 of the butter. Air fry again for another 2 minutes and 30 seconds, or until lightly charred on the outside and piping hot right through the centre (timings may depend on size of chicken pieces - safe internal temp for chicken is 165F/74C). 4️⃣Remove the skewers and brush with the remainder of the butter. Sprinkle over more parmesan & parsley whilst they're still hot if desired. *The chicken is nearly cooked after 10 minutes and the outside is piping hot, so I just use the same brush/butter throughout. If you're at all wary just save 1/3 of the butter for the end baste and use a different brush (or clean the first one).
Day 19 | 30 days of 30 minute dinners 😋 Here’s a one pan delight to round up the week! It’s so full of flavour - you’re going to love it 😄 Enjoy! Chris x CREAMY CHICKEN & CHORIZO | Serves 3-4 INGREDIENTS ➡️CHICKEN 600g / 1.3lb boneless skinless Chicken Thighs (preferably 6 even-sized thighs) 1 1/2 tsp Smoked Paprika 1 tsp Dried Oregano 1/2 tsp EACH: Garlic Powder, Salt 1/4 tsp EACH: Onion Powder, Black Pepper 1/8 - 1/4 tsp Cayenne Pepper 1 tbsp Olive Oil ➡️SAUCE 1 small White Onion 100g / 3.5oz diced Spanish Chorizo* 2 cloves of Garlic 60ml / 1/4 cup Dry White Wine 180ml / 3/4 cup low-salt Chicken Stock 180ml / 3/4 cup Double/Heavy Cream, leave at room temp 20g / 1/4 cup freshly grated Parmesan 1/2 bunch of Fresh Basil (~15g) 175g / 6oz Baby Plum Tomatoes METHOD 1️⃣Coat both sides of the chicken thighs with the seasoning. Add the oil to a large pan over medium-high heat. Once hot, add the thighs and fry both sides until lightly charred and cooked right through the centre (4-5 minutes on each side depending on size). If they start charring too aggressively just lower the heat slightly. Remove and place on a plate to one side. Lower the heat to medium. 2️⃣During this time finely dice the onion and garlic, then halve the tomatoes and roughly dice the basil. If you need to grate the parmesan, make the stock and dice the chorizo do this now too, although if you run out of time you can do this whilst the onion is frying (next step). 3️⃣Add the onion to the leftover fat in the pan and fry until it begins to soften. Add the chorizo and fry for 2 minutes, then add the garlic and fry for 30 seconds. Pour in the wine then raise the heat and bring to a rapid simmer. Cook for around 2 minutes until it almost completely evaporates. Lower the heat slightly. 4️⃣Add the stock, cream and parmesan and give it a really good stir to blend everything. Simmer fairly rapidly for 3-4 minutes until the sauce thickens, stirring frequently. Add the tomatoes, basil and the resting juices from the chicken and gently simmer for a couple of minutes until the tomatoes begin to soften. 5️⃣Turn the heat to low, add the chicken back and spoon over the sauce for a minute or so to warm it through. Serve and enjoy! *I buy this already diced into small cubes. If you can only find whole chorizo that's fine, just dice it up nice and small. I recommend this over larger chunks so it gets more evenly distributed, instead of large chunks here and there. **Here I've served with orzo and some rocket. If you want to serve with orzo I recommend 100g/1/2 cup per person (dry weight). Once cooked, I just mix in a splash of cooking water, a drizzle of extra virgin olive oil and a good squeeze of lemon juice. Rice could also work, or anything to mop up that yummy rich sauce!

This is the best little skillet dinner, it can be made in less than 30 minutes 🙌 ✨INGREDIENTS ✨ * 1 tablespoon olive oil * 1 pound ground turkey * 1 small onion, chopped * 2 tsp. minced garlic * 1 tsp. salt * 1/2 tsp. ground black pepper * 1/2 tsp. dried oregano * 1/2 Cup Sun-Dried Tomatoes, drained and * roughly chopped * 1 Cup long grain white rice * 2 Cups chicken broth * 5 oz. baby spinach * 1 lemon, zested and juiced * 1/2 Cup feta cheese crumbles ✨INSTRUCTIONS✨ 1. Heat oil in a large skillet over medium heat. 2. Set turkey into skillet and break it up into small pieces. Then cook ground turkey with onion, seasonings and garlic until meat is browned and onion is translucent. 3. Add sun dried tomatoes, rice and chicken broth. Bring to a boil. 4. Reduce heat to simmer, cover the skillet and cook 15 minutes until rice is tender. 5. Uncover and stir in spinach, lemon juice and zest. Cook until spinach is wilted. 6. Marry Me Chicken Pasta 💍 This recipe is such a crowd-pleaser and it only takes about 30min. The best part? It comes together in one pan! Here’s how I made it: - 1/2 lb chicken - 1/2 lb pasta of choice - 1/4 cup sun-dried tomatoes, jullienned (plus oil) - 2 T butter - 1 medium shallot, diced - 1 t salt, to taste - 1 t Italian seasoning - 1/2 t onion powder - 1 t pepper, to taste - 1/2 t paprika (can sub smoked) - 1/2 t chicken bouillon - Dash of cayenne, optional - 1/2 t red pepper, to taste - 6-8 cloves garlic, to taste - Olive oil - 2.5 cups chicken broth - 1/2 cup half & half (or cream) - 1/2 cup fresh parmesan (plus more to garnish) - Handful of spinach - Fresh basil, torn, to taste 1. In a large sauce pan, heat about 1 T of sun-dried tomato oil and 1 T butter over medium heat. Cook your chicken until no longer pink and set aside. Cut into bite-sized pieces. 2. Reduce heat to low and add in another T of butter along with your shallot and seasonings. Cook for 2-3 minutes (add in some olive oil if needed). Add in your garlic and cook for another minute. 3. Pour in your chicken broth, scraping up any brown bits on the bottom of the pan. Bring to a simmer, add in your pasta, and stir. Cover and simmer until al dente, about 10-15 minutes, stirring every few minutes. 4. Once your pasta is done, add in your half & half, sun-dried tomatoes, and parmesan. Stir until melted. 5. Add in your spinach, cooked chicken, and basil. Stir until spinach is wilted. Serve immediately and top with more fresh parm. Cut beef into cubes and marinade with ingredients. 2. Prepare vegetables by chopping bell peppers and onions into petals and finely mincing ginger and garlic. 3. Combine sauce ingredients in a bowl. 4. Heat 2 tbsp of oil in a hot wok and sear beef for 3-4 minutes making sure the beef has a nice crust. 5. Remove beef and add more oil to the wok. Sauté the garlic, ginger, and vegetables until slightly translucent(2 minutes) then add back the beef and the sauce. 6.
