GOBI MANCHURIAN🇮🇳
This is one of my favorite ways to eat cauliflower, it’s an Indo Chinese fusion of flavours. With the spiciness of India and the sweet sticky flavours from china with the crispness of the cauliflower it’s pretty unbeatable!
Ingredients
1 head of a cauliflower
For the batter:
1/2 cup plain flour
1/2 cup corn starch
1 tsp chilli powder
1 tbsp tandoori paste
1 tsp garlic powder
3/4 cup water (more if too thick)
Vegetable oil for frying
1 red pepper
1 green pepper
3 spring onions
1 red onion
1 red onion
3 cloves garlic
1 thumb piece ginger
1 tbsp ketchup
1 tbsp soy sauce
1 tsp chilli powder
1 tsp brown sugar
1 tbsp cornstarch with water
Method:
1. Start by boiling your cauliflower florets for 10 mins, you don’t want them too soft.
2. Now make the batter by mixing all ingredients together in a bowl.
3. Drain your cauliflower and add it to the batter to coat and then head up the vegetable oil to frying point and fry the battered cauliflower until golden and crispy, about 5 mins. Fry them off on a kitchen towel.
4. Now fry off your vegetables, garlic and ginger in a little bit of oil until softened and fragrant, then add in the ketchup, soy sauce, brown sugar, chilli powder and cornstarch slurry and mix on a low heat.
5. Now add in the crispy cauli and toss to coat and serve with fresh spring onions and enjoy!

-1 cup washed red lentils
-1/4 cup washed yellow split peas
-1/4 tsp turmeric
-1/2 tsp garam masala
-big pinch of salt
-1/4 cup vegetable oil
-1 tsp cumin seeds
-6 garlic cloves
-1/4 inch ginger
-2 green chillies
-1/2 tsp chilli powder
-1/2 tsp cumin powder
-1/2 tsp asafoetida powder (hing)
-1/2 tbsp curry powder
👇🏾METHOD👇🏾
-mix the water and yellow split peas then bring to a boil, reduce the heat and simmer for 10 minutes. Add the red lentils, turmeric and salt then simmer for another 20 minutes. Stir in the garam masala 5 minutes towards the end.
-fry the cumin seeds for a minute or 2 allowing them to release their smell then add the minced garlic and chillies then fry for another 10 minutes on a low heat.
-add the dried spices 5 minutes before finishing frying.
-pour the hot oil over the cooked lentil/split peas, stir it in and it’s ready to serve.
