Pumpkin cheesecake bars
Crust:
15 graham crackers ( I used the cinnamon kind)
1/4 cup granulated sugar
1 stick unsalted butter,
melted (8 tbs)
Cheesecake filling:
Three 8-oz packages cream cheese,
room temperature
1 1/2 cup granulated sugar
1/2 cup sour cream
1 1/2 teaspoons pure vanilla extract
3 eggs, room temperature
1/8 teaspoon salt
Pumpkin filling:
1 1/4 cups pumpkin puree (not pie filling)
1 1/2 teaspoons pumpkin pie spice
1 teaspoon cinnamon
1 tablespoon all purpose flour
(1 1/2 cups of the cheesecake filling will be added to this)
Crust:
1. In a food processor, put in the graham crackers and blend until there are fine crumbs.
2. Then add in sugar and butter and mix in the process until combined.
3. Press the crust into the bottom of a 9x13 pan.
4. Bake the crust for 10 minutes at 350 degrees Fahrenheit.
Bars:
1. Mix pumpkin puree, spices, and flour.
2. With a hand mixer or stand mixer, mix cream cheese and sugar until smooth. Add sour cream, vanilla, and salt until combined.
3. Add in eggs, one at a time until combined.
4. Add 1 1/2 cups of the cheesecake mixture to the pumpkin mixture. Mix until combined.
5. ���Then alternate cheesecake filling and the pumpkin filling all over the top of the crust. Then swirl together.
6. Bake for 35-45 minutes
7. Allow to cool. Then place in the fridge for at least 4 hours so they are completely chilled.

Pumpkin filling:

1 tsp vanilla extract
1 tsp pumpkin spice

Cream cheese filling:
8oz cream cheese
1/4 cup granulated sugar
1 tsp vanilla extract
Glaze:
1/2 cup powdered sugar
1-2 TBS milk
1 tsp vanilla extract
1. Allow puff pastry sheet to defrost.
2. Cut into 6 pieces
3. Mix fillings separately.
4. Lightly trace an oval on each piece.
5. Place fillings on sheets.
6. I piped them with a sandwich bag.
7. Brush egg wash on crusts of the puff pastry.
8. Bake at 400 degrees Fahrenheit for 20 minutes.
Cool before adding glaze.
