Didn’t have pancetta or veal. I would’ve liked to infuse some thyme or rosemary into the sofritto. Would’ve been nice to have the time to properly chop the onions (robo coupe the carrots or celery is fine…but onions not so much. Way better hand chopped. Would’ve liked red onions instead of white.
