If you ever wondered if pasta could fit into your healthy lifestyle or weight loss goals, you can officially stop wondering. The answer is yes.

This creamy Cajun pasta is fluffed with Veggies, Prioritize’s Protein, and definitely hits all of the necessary satisfaction elements of a meal.

Ingredients:
• 2 cups dry pasta
• 2 cups cauliflower rice
• 2 tbsp olive oil
• 1 onion
• 3-4 cloves of garlic
• 1 pepper
• 16oz mushrooms
• 2-3 cups spinach
• 1 lb chicken breast
• optional: 3 tsp fresh thyme
• sun dried tomatoes
• 3/4 cup light cream cheese
• 1 block? Of feta
• salt & pepper
• Cajun seasoning blend

Directions:
1. Bring a large pot of water to a boil, season with salt. Once it’s boiling, add cauliflower rice and pasta. Cook according to pasta directions

2. Save one cup of pasta water before you drain it. Set the pasta water aside. Drain the rest of the pasta and rinse with cold water, set aside.

3. In a large skillet add 2 tablespoons of olive oil and a chopped onion, sauté until translucent. Add in your garlic and chopped chicken and season with salt and pepper. Option to also season with a teaspoon of Cajun spice. Cook your chicken for about 5 minutes on each side. Remove from pan and set aside.

4. In the same pan that your chicken was in, add mushrooms and pepper, season with a little bit of salt, and cook for a bout five minutes or until soft and cooked through.

5. Create a well or a circle in the middle of your pan and add whipped cream cheese and feta. Season again with half a teaspoon of salt and pepper and a teaspoon of Cajun seasoning. Cover in let cook on medium heat until the cheese is melted. This will only take a few minutes.

6. Once the cheese is melted stir in half a cup of pasta water at a time until you’ve reached your desired sauce consistency.

7. Add in your chicken, your pasta, dried thyme and spinach. Stir until spinach is wilted. Top with sun-dried tomatoes and serve!
