CHEESE RICE PAPER TTEOKBOKKI | I love tteokbokki but I hate that I have to finish the whole pack or else it goes bad tomorrow which is so rude. Cue rice paper tteokbokki, even better, cheese stuffed rice paper tteokbokki! rice paper keeps forever (i think).
must use two rice papers so it doesn’t break easily 🤘🏽
- 10 rice papers
- Mozzarella Cheese
Sauce:
- 1 tsp oil
- 1 clove garlic, chopped
- 1 cup stock
- 1 tbsp gochujang
- 1 tsp light soy sauce
- 1 tbsp honey
- Cornstarch slurry: 1 tsp cornstarch + 1/4 cup water
- 1 tsp sesame oil
- sesame seeds + spring onions, for garnishing
1. Layer two dry rice papers, soak in water for a few secs until soft & pliable. Transfer to separate plate. Light brush plate with water so rice paper don’t stick.
2. Add cheese on one end of rice paper, and fold rice paper over cheese like a cute popiah burrito.
Sauce:
1. Saute garlic until fragrant and pour in stock. Allow to come up to a boil.
2. Add gochujang, light soy sauce and honey, stir and let it bubbly boiling before adding the cheese rice paper tteokbokki.
3. Option to also add other toppings like veggies, boiled eggs, fish cakes. I got leftover enoki cus my gut needs it.
4. Pour in cornstarch slurry and let sauce thicken. Once sauce thickens, turn off the heat. Add sesame oil and garnish with sesame seeds and spring onions. EAT!
