Spring Roll Salad with a Peanut Dressing🤝🍤🥗 you’re going to want to make this one!⬇️
Serves 2-3 people
Peanut Sauce:
1/3 cup peanut butter
1 tbsp olive oil
1 tbsp soy sauce
1 tbsp honey
1 tsp rice vinegar
1 tsp sriracha or chilli sauce
2 garlic cloves
1 tsp fresh ginger
1/2 lime, juiced
Water to thin (1-2 tbsp if needed)
*Mix everything in a small bowl or use an immersion blended. Set aside)
Shrimp:
1 lb shrimp, shells removed, pat to dry
1 tbsp olive oil
Salt and pepper
*Fry the shrimp on medium heat for 1-2 minutes per side in your olive oil, until pink and cooked through.
*Season lightly with salt and pepper.
Additional ingredients:
100 grams cooked and cooled rice noodles
1.5 cups purple cabbage, sliced
2 small carrots, sliced
2 mini cucumbers or half a large one, sliced
1 small jalapeño, sliced
1 avocado, sliced
1/4 cup green onions, chopped
1/4 cup cilantro, chopped
1/4 cup mint, chopped
Peanuts (optional)
Chilli oil (optional)

Everyone has their own peanut sauce recipe and this is my.
Peanut sauce recipe:
•1/2 tablespoon cooking oil
•1 tablespoon minced garlic
•2 tablespoon chopped shallots
•3/4 cup water
•1/2 cup hoisin sauce
•3 tablespoon peanut butter
•1 tablespoon white vinegar
•1/2 tablespoon sugar
1•In a pan add oil and garlic. Cook until garlic lightly golden.
2•Add shallots and continue to fry for a minute.
3•Add the rest of the ingredients in and mix well until everything is combined and smooth. Bring to a low simmer for 2 minutes.
Sauce will thicken once cool off. If too thick just add a little more water and bring back to simmer. Store leftover in the fridge after completely cool off. Heat when ready to eat again.
Filling: lettuce, mint, fish mint, Vietnamese coriander, cucumber, bean sprout, vermicelli noodle and shrimp. You can add whatever else you want.
