Spicy Tomato & Harissa Gnocchi Bake 🍅
Serves 2-4 🔅
500g Gnocchi
2 tbsp olive oil
1 tsp fresh rosemary, finely chopped
1 small onion, finely diced
1 tsp garlic paste
1-2 tsp chilli flakes
1/2 tsp smoked paprika
2 tsp brown sugar
1 cup tomato passata/puree
2 tbsp harissa paste
1/2 cup mascarpone cheese
1 tsp salt (or to taste)
Mozzarella cheese
Parsley for garnishing ➡️
Method
1. Add your oil, rosemary, and onion to a medium saucepan and sauté for 2-3 mins
2. Add garlic paste or fresh garlic, chilli flakes, and smoked paprika, and sugar, sauté for a further 1-2 mins
3. Add the tomato passata/puree, harissa paste and mascarpone. Stir well to combine all ingredients. Allow to cook on medium heat for 4-5 mins. Add a little bit of water to loosen if becomes too thick.
4. Cook the gnocchi according to packet instructions (boil for 2-3 minutes until gnocchi start to float and drain)
5. Add the cooked gnocchi to the sauce and transfer to an oven-proof dish. Top with chunks of mozzarella and fresh flatleaf parsley.
6. Bake in a preheated oven on the top shelf at 180 degrees celsius till golden and bubbly (about 15 mins)
