Replying to @sditss who doesnt love a good pierogi??

INGREDIENTS:
2lbs of potatoes
1 cup of farm cheese (can sub for ricotta)
Salt and pepper
300g flour
150ml water
1 tbsp melted butter
4 strips of bacon
½ sliced yellow onion

DIRECTIONS:

1) Peel and cut 2lbs of potatoes into smaller chunks so they cook faster and boil for 20-25 minutes. Once soft add to a bowl and break down into mashed chunks, add 1 cup of farm cheese. You can add more to your liking. Season with salt and pepper to taste. Place in the fridge until you’re ready to assemble.
In a bowl, add 300g of flour, a pinch of salt, 125 ml of water, and a tbsp of melted butter. Mix until well combined. It will be a bit dry ar first but keep mixing, you can add a bit more water but only enough to combine it. Let sit in an air tight bowl for 15 minutes so the dough can rest

2) After the dough has rested, knead the dough onto a floured surface for 5-7 minutes. After dough is well kneaded start rolling it out. You want the dough to be as thin as possible. When it nice and thin use a bowl or cup with a 3” diameter and begin making cutouts. Set them aside and re-roll out the dough and repeat this process until all the dough is used up. I had about 20-25 circles

3) Place a tbsp of filling into the dough and then enclose it by pinching around the dough.. Use a fork to seal the ends. You shouldn’t need water or an egg wash to work with the dough. After they’re all assembled, steam then in water. They’ll sink straight to the bottom but once they float cook them for 2-3 minutes then set aside on a cooling rack to drain any excess water.

4) Pan sear them in a pan with bacon bits and sliced yellow onions, and render the fat from the bacon as oil to pan fry the onions an pierogies. Once they’re golden brown they’re ready. You’ll want to carmelize the onions first before you add in the pierogies.

Serve with sour cream and chives and enjoyyyy :))
