AD I ALL-IN-ONE AUBERGINE, TOMATO & NIGELLA SEED CURRY 🍅🍆 I am so impressed with this recipe from the brand new Rukmini Iyer @mini_and_pepper cookbook ‘India Express’ - it’s delicious! 😍 As the name suggests, it’s all cooked in one tin, making it super-duper easy too.

⭐️ 300g vine cherry tomatoes
⭐️ 2 inches ginger, grated
⭐️ 2 cloves garlic, grated
⭐️ 2 tsp nigella seeds
⭐️ 1 tsp fennel seeds
⭐️ 1 tsp coriander seeds
⭐️ 1/2 tsp ground turmeric
⭐️ 1/2 tsp mild chilli powder
⭐️ 2 tsp sea salt flakes
⭐️ 3 tbsp neutral or olive oil
⭐️ 2 large aubergines, thickly sliced (or 6 baby aubergines, halved)

1️⃣ Preheat the oven to 180°c (fan assisted)/200°c/gas 6.

2️⃣ Tip the cherry tomatoes, ginger, garlic, spices, salt and oil into a roasting tin or oven dish, just large enough to hold the tomatoes in one layer, then add the aubergine pieces.

3️⃣ Mix everything really well, then arrange the aubergine pieces on top of the tomatoes.

4️⃣ Transfer the tin to the hot oven and roast for 40-45 minutes, until the aubergine is cooked through. Serve hot with white rice.
