My No-Recipe Roasted Tomato Soup 🍅 There comes a point in late summer when you’re right in that sweet spot when tomato season and soup season briefly overlap. The tomatoes are juicy, flavorful and abundant and there’s an occasional chill in the air that makes you crave something warm and comforting. It’s on these evenings that I make this soup. I’ve broken down my method below, but it’s so simple that after you’ve made it a few times, you truly do not need a recipe. Try it for yourself and pair with a gooey grilled cheese sandwich for dunking.
*My No-Recipe Recipe*
Preheat the oven to 400. Chop 6 to 8 large, ripe tomatoes, 2 to 3 seeded and stemmed red bell peppers, 3 to 4 large carrots and 2 yellow onions. You should have enough fruit and veg to fill two rimmed baking sheets. Add a handful of peeled garlic cloves, some chopped fresh herbs (I like thyme, rosemary and sage), a few generous glugs of olive oil and a few hefty pinches of S&P. Toss and spread in an even layer on the baking sheets. Roast for 1 to 1 1/2 hours, stirring occasionally, until everything is tender and browned in spots.
In two batches, scrape tomatoes into a blender along with any juices. Purée until smooth. If needed, add some chicken stock to get things moving. Scrape into a pot. Add a quart of chicken stock (to quote @inagarten, preferably homemade). Season with S&P and bring to a simmer over low heat. Stir in a spoonful of honey (the floral sweetness is really nice with the acidic tomatoes) and check your seasoning. Add more stock if your soup is too thick, or let it simmer if it’s too thin. You can add a splash of cream here, but I don’t find it to be necessary. The carrots add nice body. Ladle into bowls and enjoy!

I threw together this quick #vegetarian stew with Moroccan inspired flavors, sort of a #noreciperecipe following the recipe template on the back of the jar of @mesadevida globally inspired starter sauce:
1-1/2 cups cooked beans
1/2 cup quinoa
1 cup chopped carrrot
1 cup chopped zucchini
1 bottle Mesa de Vida Moroccan Inspired flavor Starter Sauce
2 cups broth
Salt to taste
Slow cook on low for 6 hours
*I served this with crumbled feta cheese. 😋
