Somali recipes day 3: oven-roasted lamb shanks
what happens when you combine New Zealand lamb and Somali flavours? potentially the best-tasting meal you'll ever have.
maybe not the most traditional way of cooking this meat as you would more commonly braise for a long time, but this is a super simple way of getting some amazing lamb shanks. serve with a side of bariis and this blows away any Sunday roast you've ever had!
Somali meals are often eaten with a banana on the side. to us uneducated people it sounds a bit weird but once you have it, all other meals feel incomplete without it.

ingredients
3 lamb shanks
3-4 medium potatoes
2-3 medium carrots
1 tsp paprika
1 tsp ground coriander
1 tsp ground cumin
2 tsp salt
1 tsp black pepper
1 tbsp tamarind paste (sub with lime juice and brown sugar if you can't find it)
4 garlic cloves
large handful fresh coriander
1. using a mortar and pestle or knife, mince together garlic and fresh coriander to a paste. combine the paste with paprika, ground coriander, cumin, salt, black pepper and tamarind paste.
2. place lamb shanks in a large oven-safe dish and cover with well your marinade. leave for at least 3 hours or ideally overnight.
3. once finished marinating, add potatoes and carrots to the lamb. cover with aluminium foil and roast at 200c for 2 hours. remove foil for the last 10-15 mins to get some nice colour.
