Pasture-raised, antibiotic and hormone free, and all natural! Ordering a quarter or half a cow allows for a lot of customization. You can select cuts for grilling and bbq, other cuts for those who favor stews and slow cooked meat. You can have ground beef for months or choose to have them prepared into ready-to-eat burgers. Brisket burgers? No problem! Maybe you want half and half?
Each quarter will come with its own unique cuts, so if you want more information on what cuts you would like best, reach out to us at 914-737-2810 ext 3 or ext 2 for Spanish. If you want more in depth knowledge, you can also speak to our butcher!

PISTACHIO CRUSTED SALMON
Another simple & delicious weeknight meal that’s ready in just 20 minutes!
Ingredients:
2 6oz salmon fillets (I always get my fish & meat from my local butcher, @thebutcherandgrocer)
2 tbsp dijon mustard
1 tsp honey
1 tbsp avocado oil
Juice of 1/2 lemon
1/4 tsp salt
1/4 tsp black pepper
1 cup roasted pistachios, chopped
Directions:
preheat the oven to 400F
combine mustard, avocado oil, honey, lemon juice, salt and pepper
spoon the mixture over your salmon and top with the chopped pistachios
bake for 12-15 minutes depending on thickness

“What are our cows fed?” and “What are they finished on?” are some of the most commonly asked questions.
Our cattle is the same diet throughout their life. It consists of 70/30 grass and barley. We grow high, nutrient-rich grass that consists of rye, alfalfa, Timothy, and Clover. The barley that they eat, comes from Captain Lawrence Brewery, in Elmsford, New York. When beer is brewed, a byproduct is produced from the barley grain. Similar to an oatmeal, it is full of different nutrients.
Many times at the end of a cows life they are what is called “finished”. Because many cows are not raised in pastures rather in feedlots, farmers will use this method to fatten them up quickly at the end of their life.
Our cattle are slow growers. Meaning, they are raised 100% naturally. Being raised in a pasture means their muscles are allowed to grow the way they are supposed to, they gain weight, naturally. They are able to get all of the nutrients they need throughout their life on the hay, barley, and grass they eat.
