Lions mane & royal trumpet mushrooms
Rice paper
Not Chick’n bouillon cubes
Seasonings- paprika, cayenne pepper, black pepper, onion powder, garlic powder, and Himalayan salt, & frontier all purpose seasoning
Wet batter - seasonings listed + spring water, garbanzo flour & @justegg
Dry mix: seasonings listed + garbanzo flour + gluten free rice panko breadcrumbs

I got the recipe from @Hendri The Foodie .. when I saw his video pop on my reels feed I was like wowww I need to make this immediately
Save this easy vegan recipe and send it to a tofu lover🌱
Ingredients:
500g block firm tofu - cut into 1cm thick squares
3 nori sheets - cut to follow the tofu size
Corn flour for coating
2 tbsp oil of choice
1 tbsp garlic - minced
2 tbsp brown onion - minced
2 tbsp spring onion - finely diced
1/2 red capsicum - cut and dice thinly
Sauce ingredients:
3 tbsp soy sauce
1 tbsp sweet soy sauce (his recipe uses oyster sauce)
1 tbsp brown sugar
Method:
Press nori into tofu, best if your tofu is wet so the nori can stick. I brushed water onto it to help it stick too
Coat the tofu in corn flour
Bring a large pan to medium/high heat and fry tofu until crispy then leave aside
Add the sauce to the pan along with the garlic, onion, spring onion and capsicum. Sauté for 3 minutes and let the sauce thicken an little then add the tofu back in and sauté for about 2 - 3 minutes
Serve as is or with some rice and enjoy 😊

2022 would not be complete for me unless I posted my most popular and most controversial post of 2022. Since I first posted this in June , it has gotten over 11 million views on social media ! It has also gotten the most hate over the fact that people don’t feel it very authentically Thai. Whatever your thoughts are, it is still a wonderful meal that you can eat over and over again and not get tired of!

INGREDIENTS:
2 cups finely sliced red cabbage
2 cups shredded carrots
4 mini bell peppers finely sliced
2 green onions chopped
2 cup edamame
2 cups cooked quinoa
1 bunch cilantro , chopped
DRESSING:
4 tbsp peanut butter
2 tbsp tamari
2 tbsp rice wine vinegar
juice of 1 lime
1 knob of fresh ginger, grated or finely minced
1 heaping tbsp homemade garlic paste
1 tbsp sesame oil
2 -3 tbsp sriracha
1 cup hot water
Add all of your vegetables and quinoa to a large bowl.
Add all of the ingredients for the dressing to a bowl. Start by adding about a 1/4 cup of hot water to the bowl and start to whisk
Continue adding water and whisking until the sauce lightens and gets creamy and smooth. You want it a bit runny to pour over the salad but not too thin. Alot will depend on your choice of peanut butter, some are thicker than others.
Taste the sauce and add more sriracha to make it spicier!. Pour over the veggie/quinoa mixture and stir together.

RECIPE (gluten free, dairy free, vegan option*): Salad ingredients: -1/2 cup dry quinoa -1 cup bone broth (*or veggie broth for a vegan option) -1 can chickpeas, drained & rinsed -1 red bell pepper, cut into thin slices & then cut in half -1 heaping cup matchstick carrots -2 cups shredded purple cabbage -1/3 cup chopped green onions -1/3 cup chopped cilantro -chopped cashews to top Dressing ingredients: -1/4 cup tahini -4 tbsp water -juice from 1/2 lemon -1 clove garlic, minced -1/2 tbsp fresh minced ginger -1 tsp curry powder -1 tsp maple syrup or honey Cook quinoa in bone broth according to package directions (about 15 minutes). Let the quinoa cool completely. Stir together or shake all dressing ingredients. Add all salad ingredients (except for cashews) to a large bowl and top with the dressing. Toss to combine. Serve with cashews! Stores well in the fridge for a few days.

if i could convince my fiancé to like tofu, i’m pretty sure i could convince anybody 😂 the air fryer method gets em real crispy and then it’s all about the ORANGE SAUCEEEE 🍊
RECIPE (vegan, gluten free, no added sugar):
for the tofu:
-1 block tofu, pressed for 15 minutes and then cut into cubes
-1 tsp sesame oil
-2 tbsp arrowroot starch (or cornstarch)
for the sauce:
-juice from 2 oranges (about 1/2 cup)
-zest from 1/2 orange
-1/4 cup coconut aminos (you can try tamari but then it’ll def need some honey or maple syrup!)
-1 tsp sesame oil
-3 cloves garlic, minced
-1 small piece ginger, grated
-red pepper flakes to taste
-1tbsp arrowroot starch (or cornstarch) + a little water to make a slurry
to serve:
-broccolini or broccoli (i like to air fry with some spray, s+p, at 380F for ~10 mins)
-cooked white rice
-chopped green onion
-sesame seeds (i was out this time!)
press tofu for 15-20 mins (i don’t have a tofu press so i just wrap it in a dish towel and place some heavy objects like a cast iron pan). then cut into small cubes. transfer to a large bowl and toss the tofu with sesame oil and arrowroot starch. spread out evenly on an air fryer pan (may have to do 2 batches if your air fryer is small). air fry at 400F for 18 minutes or until crispy. meanwhile, bring a large pan to medium heat. add sesame oil and once hot, add garlic, orange zest and ginger. sauté for one minute. then add orange juice and coconut aminos. stir and continue cooking for a few minutes. reduce heat to low. add arrowroot starch slurry and stir. continue to let it thicken, then add in tofu and toss to coat it in the sauce. serve with broccolini, rice, sesame seeds and/or green onion. enjoy :)
