Healthy Burgers (vegetarian & gluten-free)😍

This recipe makes about 6 patties:
460 g / 1 lb. canned chickpeas*
1/4 cup water (60 ml)
2 tablespoons lemon juice
1/2 cup almond flour (or oat flour) (120 ml)
2 teaspoons paprika spice
1 teaspoon ground cumin
1 teaspoon ground coriander
pinch of chili powder
pinch of salt
pinch of pepper

olive oil for cooking

Greek yogurt sauce:
Greek yogurt, lemon juice, paprika spice, ground cumin, ground coriander, pinch of salt, pinch of pepper & pinch of chili powder

1. Put the chickpeas, water and lemon juice into a blender or food processor and mix until the mixture is well-combined, but can still be chunky (you can add more water if it’s too thick)
2. Scoop the mixture into a bowl
3. Add the rest of the ingredients and stir until combined
4. Make patties of the mixture and cook on a non-stick skillet with a little bit of olive oil on medoum hear for about 5 minutes on each side
5. Mix all the ingredients for the sauce together. Stack the hot patties on gluten-free oat buns, and top with your favourite hamburger toppings, for example, lettuce, tomatoes and the sauce

*If you are on the elimination phase of the low-FODMAP diet, 1/2 patty is low-FODMAP which contains less than 40g chickpeas☺️ You could add some lactose-free halloumi to this burger!

TRADER JOE'S MEALS EPISODE #8 : Creamy Chicken + Gnocchi Skillet✨

Okay so this may not be the prettiest meal I've ever created but it sure is tasty 😋 this is perfect for a one pan easy weeknight dinner! #kitk

You'll need:

1 lb chicken strips or chicken breasts
1 pack @traderjoes cauliflower gnocchi (regular will work too)
1 cup chicken broth
1 cup cream (I used coconut)
1 cup cheese of choice (I used @traderjoes cheddar goat)
1 can artichoke hearts
2-3 handfuls of spinach

olive oil
2 tbs minced garlic
1 tsp salt
1 tsp garlic powder
1 tsp paprika
1/2 tsp thyme
1/2 tsp oregano
1/2 tsp red pepper

Season chicken with olive oil, salt, garlic powder and paprika.

Cook chicken over medium heat in a skillet for about 4 minutes each side or until cooked through.

Remove chicken from the pan and add garlic. Cook until fragrant.

Then add chicken broth, cream, cheese, oregano, thyme, and red pepper flakes. Mix well.

Then add chopped artichoke hearts and bring to a simmer.

Add @traderjoes gnocchi, cover and let cook for 2-3 minutes or until tender.

Add back your chopped chicken, spinach and mix until wilted.

Serve and enjoy!

This is a quick and easy weeknight dinner that is equally satisfying, delicious and comforting! The fresh tomatoes in the bruschetta sauce mixed with the basil pesto make for the perfect combo 👏🏽 #kitk

*makes 2 larger portions or about 4 smaller portions*

You'll need:

1 pack @traderjoes wild caught Argentina shrimp (frozen)
1 pack @traderjoes fresh gluten free fettuccine (refrigerated)
1/2 container @traderjoes bruschetta sauce (refrigerated)
1/4 cup @traderjoes basil pesto (refrigerated)
1/2 pack of baby zucchini (sliced into rounds)
1 tbs minced garlic
1/2 cup pasta water (reserved)
1 cup shredded pecorino cheese (plus more for topping)
juice + zest of 1 lemon
1 bunch fresh basil (chopped)

Defrost your shrimp under cold water for 3 minutes until no longer frozen.

Heat up a pan over medium heat, add 1-2 tbs olive oil and cook shrimp on each side for about 2 minutes or until fully cooked. Season with salt and pepper.

Once shrimp are fully cooked, add lemon juice + zest and toss shrimp to coat.

Remove shrimp from the pan and add minced garlic. Let cook for 1-2 minutes or until fragrant. Then add baby zucchini rounds and cook for about 4-5 minutes or until tender.

Meanwhile cook pasta according package directions, reserving 1/2 pasta water for the sauce.

Once zucchini is cooked add bruschetta sauce, pesto, pasta, cheese and basil to the pan. Mix well.

Add shrimp back into the pan and toss gently. Top with extra bruschetta sauce, cheese and basil.

Okay, but who also knew that butter knife jar hack?... genius!

LIKE + SAVE this one when you're craving Mexican food and in need of an easy weeknight dinner! #kitk

You'll need:

1 lb ground beef (or meat of choice)
1 packet of @Trader Joe's taco seasoning (or seasoning of choice if you don't like it spicy)
1 jar of @traderjoes salsa (red or green works)
1 can of black beans
1/2 bag roasted corn
1 jar @traderjoes enchilada sauce
2 packs of @traderjoes almond tortillas (or tortillas of choice)
cheese of choice for topping (I used @traderjoes cheddar goat)

Top with:

sour cream (@traderjoes has dairy free too)

Preheat oven to 375 F.

Brown meat in pan over medium heat.

Add taco seasoning, beans, corn and mix well.

Spread a layer of enchilada sauce and tortillas in the bottom of a casserole dish.

Then layer meat mixture, cheese, tortillas, enchilada sauce in a casserole dish until full.

Bake at 375 F for 20 minutes or until cheese is melty and heated through.
