◉ Ingredients
For starter,
425g warm water
7g dry yeast
25g olive oil
For squid ink cheesy dough,
20g squid ink
500g strong flour
4g salt
8 string cheese
For egg topping,
5 eggs
2 cup mayonaise
1/3 cup heavy cream
◉ Cooking process
1. Mix warm water, dry yeast, and olive oil in a bowl and ferment for 10 minutes.
2. Mix flour and salt in another large bowl, add fermented yeast water and mix then add squid ink and knead it.
3. Spread the dough into a rectangle shape, put the cheese in the center, fold one side, add the cheese again, and fold another side. (1st fermentation)
4. Take out some gas then divide the dough into 4 portions.
5. Lean on a canvas cloth and let it spread upwards instead of spreading sideways. Ferment until doubled in size for about 45minute.
6. Carefully put on the oven pan to avoid escaping the gas.
7. Bake in a preheated oven at 445F for about 12-15 minutes.
8. Put mustard - egg - arugula - cheese - pepper on the bread.
