going on vacay soon so mission clean out the fridge has commenced!! buffalo chicken stuffed peppers are up first & they kinda slay 💅 an easy, balanced dinner!
RECIPE (gluten free, dairy free option*)
-1 lb chicken breast
-1/2 cup cottage cheese (sub whole milk greek yogurt or *mayo)
-1/2 cup @primalkitchen buffalo ranch dressing (if you don’t have this, i’d do a mix of buffalo sauce & ranch)
-2 tbsp buffalo sauce (i used Frank’s, you can add more to make it spicier)
-1/4 cup chopped green onion + more for garnish
-1/2 tsp onion powder
-1/2 tsp garlic powder
-salt + pepper
-3 red bell peppers, cut in half down the middle & seeds/stems removed
preheat oven to 400F. add chicken breasts to a pot and cover with an inch of water. bring to a boil. once boiling, reduce heat to low and let cook for 10-15 minutes (depending on the size/thickness of your chicken, make sure it reaches 165F). remove from pot and shred with 2 forks or a mixer. add cottage cheese, buffalo ranch dressing, buffalo sauce, green onion, onion powder, garlic powder, salt and pepper. toss until combined. place bell peppers cut-side-up in a large baking pan (i used a 9x16 pan). stuff each with the buffalo chicken mixture. bake for 30 minutes. let cool slightly and then garnish with ranch dressing and more green onion. enjoy!
