Garlic Parmesan Chicken & Potatoes make an easy weeknight dinner! 🔥
Recipe
•2 chicken breasts
•4 - 5 small/medium sized potatoes
•olive oil + salt, pepper, garlic powder, paprika (for potatoes)
•2 TBSP of butter
•1/2 tsp each of salt and pepper
•1 tsp each of paprika, onion powder, and Italian seasoning
•2 TBSP minced garlic
•Buffalo Wild Wings Garlic Parmesan Sauce
•1 cup of shredded mozzarella cheese
Instructions
•wash potatoes, peel, and cut up into small cubes
•toss with olive oil, salt, pepper, garlic powder, and paprika (I don’t use exact measurements for this part)
•cook potatoes in the air fryer at 400 degrees for about 20 minutes shaking them around at least a couple times while they cook
•once potatoes are cooking, cut chicken into cubes
•cook chicken in a skillet on medium high heat with a little butter
•season chicken with 1/2 tsp each of salt and pepper, 1 tsp each of paprika, onion powder, and Italian seasoning
•once chicken is finished cooking add minced garlic and the garlic Parmesan sauce
•add cooked potatoes to the skillet
•top with shredded mozzarella cheese
•broil in the oven for just a few minutes to melt the cheese (you could also cover with a lid and let this sit on the stove until cheese melts)

Chicken, Cheese, and Rice is perfect for taco Tuesday! 🔥
Recipe
1 lb chicken
Olive oil
1/2 tsp salt
1/4 tsp cayenne
1 tsp each of cumin, dried cilantro, black pepper, and chili powder
1 TBSP of minced garlic
1 10 oz can of Rotel
1 8 oz can of tomato sauce
1 1/2 cups of chicken broth
1 cup of long grain white rice (uncooked)
White Queso Cheese Dip (I like Pancho’s brand from Sam’s Club)
Steps
-cut chicken into small pieces and cook in a skillet on medium high heat with a little bit of olive oil
-add salt, pepper, cayenne, cumin, dried cilantro, black pepper, and chili powder
-let that cook until chicken is cooked through
-add Rotel, tomato sauce, minced garlic, chicken broth, and uncooked rice
-stir well, cover with a lid, and cook on medium low heat for about 15-20 minutes or until rice is cooked (I stirred it once about half way through)
-top with white queso
-serve as is or in tortillas

•1 tsp each of onion powder and garlic powder
•5 pieces of bacon, cut into small pieces
•4 oz chopped mushrooms
•1 cup of shredded colby Jack cheese
•honey mustard
Instructions
•peel potatoes, wash, and cut up into small cubes
•toss with olive oil, salt, pepper, garlic powder, and paprika (I don’t use exact measurements for this part)
•cook potatoes in the air fryer at 400 degrees for about 20 minutes shaking them around at least a couple times while they cook
•once potatoes are cooking, cut chicken into cubes and chop uncooked bacon into small pieces
•cook bacon in a skillet and remove from the pan when cooked
•remove some of the bacon grease and add chicken to the skillet
•season chicken with 1/2 tsp each of salt, pepper, paprika, and 1 tsp each of onion powder and garlic powder
•once chicken is almost finished cooking add the chopped mushrooms to the skillet
•once chicken and mushrooms are cooked add cooked potatoes to the skillet
•add honey mustard and stir everything together
•top with shredded colby Jack cheese and bacon bits
•broil in the oven for just a few minutes to melt the cheese (you could also cover with a lid and let this sit on the stove until cheese melts)
