Part 2: 5 MEALS FOR $50 CHALLENGE
5 dinners for $50 challenge here are the meals I’m going to shop for and cook
I’ve got 3 vegetarian and 2 meat dishes but I think they all sounds tasty. I’m only going to buy 1 whole chicken and use it for 2 meals.
The rules I’ve made are I can use whatever pantry ingredients I have on hand but that’s it. Everything else has to be included in my $50.
It’s actually taken a lot of planning to hopefully get in under the $50. I also wanted the meals to be tasty and nutritious or what’s the point?
Potato and lentil Pattie’s in lettuce wraps with garlic yoghurt and pickled onions
Chicken Banh Mi
Chicken, pickled carrot and onion, lettuce, chilli and mayo
Vegetable Fritters
Corn, onion, carrot fritters with pickled carrot and onion salad
Mexican bean baked potatoes with yoghurt and spring onion on top.
Chicken and sweet corn soup
