i know, i didn’t do a loop 😭 for this video it just seemed so much better without one. brownies are also the thing i suck at, but these were so amazingly gooey and perfect. i also love the debate of “should a brookie be brownie or cookie on top?” so i’ll leave that up to you :-)
brookies recipe 🍪
brownie layer
- 1/2 cup unsalted butter melted
- 3/4 cup granulated sugar
- 1/2 cup light brown sugar
- 3/4 cup unsweetened cocoa powder
- 2 eggs
- 1 tsp vanilla extract
- 1/4 tsp baking powder
- 1/2 cup all-purpose flour*
- as many chocolate chunks as wanted :-)
cookie layer
- 1/2 cup unsalted butter melted
- 1/4 cup granulated sugar
- 3/4 cup light brown sugar
- 1 egg
- 1 egg yolk
- 1 tablespoon vanilla extract
- 1/2 teaspoon baking soda
- 1 1/2 cups all-purpose flour*
- 1/2 cup chocolate chunks + more to sprinkle over the top before baking
*chocolate chunks can be replaced with chips, or you can put none in the brownies if you prefer :-)
1. preheat oven to 160c fan and line a pan (preferably 9x13 inch) with baking paper
2. for the brownies, in a large bowl add butter, both sugars and cocoa powder and microwave for 1 minute or until the butter is melted and combine
3. mix in eggs and vanilla very well
4. add baking powder and flour and mix until fully combined and gently mix in the chocolate chunks if adding
5. pour into prepared baking pan
6. for cookie layer, mix melted butter and both sugars together until in a bowl until smooth
7. add egg, yolk and vanilla extract and beat until fully combined
8. add in baking soda and flour, mixing until just combined
9. gently fold in chocolate chunks and avoid over mixing
10. drop large spoonfuls of dough on top of brownie layer and spread out to fill any gaps evenly (it doesn't have to be perfectly covered!)
11. sprinkle some chocolate chips over the top for presentation
12. bake for 25-30 minutes or until top cookie layer is slightly browned and edges are set. if the cookie dough begins to brown too quickly place a piece of tin foul loosely across the top. allow to cool fully for 30 mins before cutting and serving and enjoy <3
