Recipe for 20 pink ravioli
For the dough:
250gr strong flour
100gr beet
1 large egg
For the filling:
250gr frozen green peas
100gr goat cheese
50gr parmesan cheese
A pinch of salt and pepper
2.5gr dried chives
For the sauce:
15gr potato starch
15gr olive oil
200ml full fat milk
Black pepper to taste
A pinch of nutmeg (optional)
1/2 teaspoon dried basil
120gr goat cheese
Method:
For the dough:
Dry beets, blend them thinly and combine with flour and eggs. Knead and let stand 20 minutes. Now roll out the dough to the thickness I show in the video and let it rest.
In the meantime, prepare the filling: cook the peas in a pan until soft, add parmesan cheese and spices and mash with a fork (if you prefer you can blend the mixture). Let it cool and use it to stuff the ravioli, a generous teaspoon per ravioli should be enough.
For the sauce:
In a small saucepan mix flour and oil. Bring them to the stove, stir vigorously and add the boiling milk. Stir again and add the cheese and spices, wait for it to thicken slightly and turn off the heat.
Serve: Pour the cream cheese, place the ravioli on top and garnish with chives.
