𝔹𝕝𝕦𝕖𝕓𝕖𝕣𝕣𝕪 𝔹𝕒𝕘𝕖𝕝 𝕨𝕚𝕥𝕙 𝔹𝕝𝕦𝕖𝕓𝕖𝕣𝕣𝕪 ℂ𝕣𝕖𝕒𝕞 ℂ𝕙𝕖𝕖𝕤𝕖 🫐🧀

Although I have made 🥯 many times this is my first time making 🫐 bagels! I have wanted to do this for the longest time and thankfully @happyhomebaker was so kind she not only shared her recipe with me, she made the blueberry bagels along with me!

I made these bagels 3 times because the peeps at home said that it was the most delicious bagel they have eaten! Thank you so much Rie for sharing your recipe and knowledge with me so generously, I am very grateful 🙏🙏

I’m sharing Rie’s recipe here (with very minor tweaks) with her kind permission. Please drop by Rie’s page and admire her beautiful bakes like I always do!


Makes 5 Bagels

Bread flour 300g
Levain 60g
Sugar 10g
Raw Honey 10g
Salt 6g
Water 60g
Fresh milk 60g
Frozen blueberries 45g
Oil 10g

🫐🫐 Cream Cheese🧀

250g Cream Cheese
100g Frozen Blueberries
1 Tbsp Sugar
Lemon Zest


➡️ Combine everything (hold the oil) and knead the dough until it comes together nicely

➡️ Add oil and continue kneading the dough until it becomes smooth (no need for window pane).

Add blueberries to the dough and roughly mix for a min.

➡️ Proof until (almost) double.

➡️ Divide into 5 portions and roll them into tight balls.

Rest for 15min.

➡️ Shape into bagels.

➡️ Proof until double.

➡️ Put a pot of water to boil and add 1 tbsp sugar

Boil for 10-20 sec each side and longer if you prefer more chewy.

➡️ Drain the bagels and place them on a non-stick baking paper.

➡️ Bake at 210C for 15-20min.

For the 🫐 spread :

Cook the blueberries, sugar, zest over a low flame until it thickens and leave it to cool.

Whip with cream cheese until fluffy!

They’re not perfect, but they taste delicious. 🤤

Sourdough discard blueberry bagels.

1/2 cup sourdough discard
3 teaspoons active yeast
6 cups of unbleached bread flour (I use king arthur )
2 tbs sugar
2 tsp sea salt
2 cups warm water
1 cup blueberries

For boiling bagels:
2 tbs honey

• Add water, active yeast, sourdough discard, salt & sugar to standing mixer. Mix until liquid turns milky. Add 5 cups of flour on low speed with dough hook attachment, Add blueberries when dough starts to come together add last cup of flour in increments on medium speed until the dough isn’t too sticky. (Add more flour if needed)
•when dough ball forms, flip it out onto table top and keep kneading with your hands until the dough forms a dense ball. Do a window pane test (stretch between to hands in a thin layer if you can see light through the dough without it breaking easily it’s ready.) this should take approximately 10minutes.
Put dough into a large bowl put it into a plastic bag or cover with plastic wrap and let it rise in a warm place for 1 hour.
•when it’s doubled in size put in the refrigerator overnight to develop a deeper flavor.
•In the morning take bowl out of refrigerator and set in a warm place to let dough come to room temperature let sit for at least 1 hour. Punch air out of dough and cut into 12 pieces. (Depends on how large you want them to be.)
•form balls and poke a hole in the middle to form your bagel shape, stretch them out so they keep their shape. Cover your bagels with a damp towel while you wait for your water and honey to come to a boil.
•set your oven to 392 degrees Fahrenheit. When water comes to a boil, Toss your bagels in and boil for 30 seconds. Place on a parchment lined cookie sheet and egg wash the tops.
•Bake for 20-25 minutes, take them out once they turn golden and let cool for 30 minutes (the residual heat will continue baking as you let them cool) cut in half and put whatever toppings you like! I personally like a generous schmear
